Shopping logistics are indeed a nightmare as is meal planning. Worse when the stores regularly fail to have things in stock and you need to change your plans after things come from the stores.
Stores are stressing my wife out horribly. She barely had a handle on it before the virus (she had to do the shopping for 2 months before my surgery that happened just before the virus hit) and its now being overwhelming at times, especially when we try to limit trips.
It used to be before, when I did the shopping, that I'd spread it over 4 days a week, to keep loads smaller (as my hip was disintegrating I could move less things) and because we used multiple stores in different directions.
Only for the winter months did we do stock ups of things, non-perishables, I'd get fresh veggies and fruit as needed for specific meals etc Now we're lucky when we can get a shopping run where everything on the list is actually there.
I avoided the convention stuff by only watching and listening to non-live stuff yesterday. Streamed videos and podcasts only for me.
