Mini golf tournament sounds like fun! There's the matter of admission to Fantasia Gardens being pricier than your average mini golf course, but IIRC one of the add-ons the conference hotel pitches are discount park tickets (usable only after 4pm, on the assumption that your conference has no evening programming), so maybe a canny hotel negotiator could score some discount mini golf tickets.
