Zucchini

I do not generally like zucchini. However, the mushroom chicken is my second-favorite dish at Panda Express even though it includes zucchini. (My favorite is the honey walnut shrimp.) So, thanks to this week's Friday night takeout, that's #24 on the list of fruits and vegetables this year.

Almost one-quarter done in the first month! I think I can do this!

I used zucchini in quiche a couple of times over the past three months. If you shred it, then squeeze it to drive off part of the moisture, then saute it to reduce the moisture further, it becomes basically invisible.
