I've been hearing about progress toward lab-cultivated meat for years, but here's the first I've heard of lab-cultivated dairy. "Precision dairy" uses bacteria to manufacture milk proteins, resulting in a powder which can be substituted for milk.

This alternate dairy is already free of lactose. I suppose the next step could be to try altering the whey protein to something that doesn't set off human immune systems that are already sensitized to it...

Yeah, while I'm fascinated by the possible use of cowless milk in space colonies, when I first heard about the bacterial production of whey protein, they were talking about using it to add texture to vegan ice cream and such. Given that someone fairly close to me is intolerant of whey protein (it sends her IBS into overdrive), I was thinking "not so smart, fellas!"
